Fresh And Pure Honey

Everyone is aware of the value of honey and up until now honey has been accepted as a real elixir of life.

Honey is the sweet liquid produced by worker bees to feed their larvae and for subsistence in winter. This concentrated liquid is sticky and contains about 17-18% moisture. The colour shade varies from pale yellow to dark green or light brown to dark brown, depending on the nectar source (the blossoms) visited by the honey bees, types of bee pollen, and minerals from soil and water, etc.

The Composition of Honey

- Moisture content ; good honey should contain about 17-18% moisture, which means honey can be stored for long period without any changes.

- Fructose in honey; honey is an important carbohydrate source. Apart from moisture, there are also several kinds of saccharides contained in honey, for example; dextrose and laevulose which is the main part of honey.

- Acid in honey; a lot of research show that gluconic acid, which is a derivative of dextrose, is the most essential substance in honey. 16 amino acids can also be found in honey.

- Minerals; honey consists of many minerals, these are: KCl, S, Ca, P, Mg, Si, Silicon, Fe, and Cu. These minerals exist in good proportions.

- Enzymes; enzymes are chemical compounds found in living organisms. They function as an activator for cell reactions. Invertase is the most important enzyme in honey.

- Vitamins; they can be detected both in chemical and biosynthesis methods. The vitamins in honey are thiamin (B1), riboflavin, ascorbic acid (Vitamin C), pyridoxine (Bb), pantothenic acid, nicotinic acid - they are called as Vitamin B complex.

- Dextrin; this is the chemical compound of long chain glucose. This part helps honey sooth your throat and smooth your skin.

- Colloidal; actually colloidal in honey is bee pollen which is not digested. This colloidal contains 4-7 kinds of protein in different amounts. The true amounts of protein in honey is about 0.1- 0.6%

- Inhibitor; this part of honey makes it act as an antiseptic against the infection of germs and plague. Medical research claims that honey can cure a burn, wound infection, fresh wound and scalds. Because it helps protect the invasion of bacteria by producing H2O2 in the glucose- lactone oxidation reaction with gluco-oxidase enzymes.
